The Fairbury Salad Festival is the biggest fund-raiser for the Jefferson Community Health and Life Auxiliary each year, and has a long tradition in Fairbury. The Salad Festival is held at the Fairbury Elks Lodge and began in 1965, just a few years after the hospital opened as Jefferson County Memorial Hospital in 1963.

The Jefferson Community Health and Life Auxiliary provides scholarships to students entering medical fields, provides baby spoons for newborns at Jefferson Community Health and Life, and provides Christmas gifts for Jefferson Community Health and Life’s nursing home residents, in addition to providing volunteer support for Jefferson Community Health and Life in a variety of ways.

The salad festival itself takes much volunteer time and effort. More than 35 individuals volunteer their time to help during the day and more than 85 items of food are donated and hundreds are served a wonderful lunch that brings the community together for a great cause.
